Perfect Flank Steak
Flank steak is a fairly tough cut of meat due to its leanness. Our simple marinade has just four ingredients and is the perfect way to prepare flank steak for the grill. While acidic citrus juice and salty soy sauce act to both season and tenderize the steak, olive oil helps to keep the meat supple and juicy. A small amount of brown sugar brings out the meat's natural sweetness and helps to create a slightly caramelized crust once the steak hits the grill.
 

Ingredients

FOR THE STEAK
1 piece Flank Steak
1 Kosher Salt
1 Ground Black Pepper
FOR THE MARINADE
1 cup Extra-Virgin Olive Oil
1 cup Low-Sodium Soy Sauce
2 tablespoons Lime (or Lemon Juice)
2 tablespoons Packed Brown Sugar
 

Directions

FOR THE STEAK
Add Steak to Marinade

In a large bowl, whisk together olive oil, soy sauce, lime juice, and brown sugar. Add steak and toss until coated. Marinate for at least 30 minutes, up to 2 hours.
Remove steak from marinade and pat dry with paper towels. Season lightly with salt (remember that there's soy sauce in the marinade) and pepper.
To grill: Preheat grill to medium-high. Place steak on the grill and cook to your liking, about 6 minutes per side for medium-rare. (Cooking time will vary due to the thickness of your steak.) Let rest before slicing and serving.
To broil: Preheat oven broiler to high. Place steak on a sheet pan and cook, turning once halfway through, until cooked to your liking, about 6 minutes per side for medium-rare. (Cooking time will vary due to the thickness of your steak.) Let rest before slicing and serving.
